A white sourdough spelt loaf made with 100% organic stoneground spelt flour.

A loaf made with 100% spelt flour is a rare thing, spelt flour is tricky to handle, it has lower gluten levels than wheat, but more significantly its gluten is in a different form that is much more fragile and difficult to work with, liable to collapse into a gloopy mess if too much water is added or it is mishandled or overworked. But the pay off is a wonderfully flavoured loaf with a subtle nutty taste, so it’s well worth the effort.

As well as the flavour there is another benefit of using 100% spelt flour. Recent research is showing that a lot of non-coeliac gluten intolerance is actually due to an issue with fructan that coexists with the gluten rather than an intolerance to gluten itself. And the wonderful thing about spelt sourdough is that not only does spelt flour have a much lower level of fructan than wheat flour the long proving process alters the structure of this fructan making it more digestible. This means that many people who cannot eat wheat bread can eat 100% spelt sourdough.
