A white sourdough loaf filled with cheddar cheese, jalapeños and ras el hanout – cheesy, tangy and fragrant with a gentle kick.

I knew that one day I would have to make a classic cheese and jalapeño loaf but felt it needed an extra ingredient to bring it to life and balance the cheeky tang of the peppers. Another North African find in Borough Market proved the key. Ras el hanout, which literally means ‘head of the shop’, blends the best and most expensive spices that a trader has to sell. For this reason every blend is slightly different, but typically it includes fragrant spices such as cardamom, cumin, clove, cinnamon, nutmeg, mace as well as more lively ingredients such as pepper, chilli and ginger.

One of the challenges of working with spice mixtures such as these is the effect they have on the dough and it quickly became clear that this spice mix inhibited gluten formation, making the dough slower to rise and more delicate to handle, and for this reason as well as the flavour getting the quantities correct has been crucial.

I also have to add that, unlike some blends of this spice mixture, the version of ras el hanout that I use does not contain any aphrodisiacs! Sorry.
