A rustic batard made with a blend of white wheat, wholemeal rye and wholemeal spelt flours to give a wonderfully open, moist crumb with a crispy crust. My favourite bread for dipping into soups and baked beans (with cheese on top of course). I’ve always wanted to make my own baked beans but it seems a little bit too much faff so I reach for the Heinz instead. Although why I’ve decided making baked beans is too much hassle but spending 36 hours on a loaf of sourdough bread is well worth it I’ve no idea!

A little word on the name. Traditionally in France there were two shapes of bread, the boule and the baguette. So when someone baked a loaf somewhere between the two it was named a batard, which is French for bastard. I’ve never been a fan of those fancy restaurant menus all in French, so bastard it is then!
