A white sourdough loaf pepped up with parmesan, smoked garlic and rosemary.

Having already created one loaf inspired by the herbs in my garden it was time to create another. When you come to pick your loaf up from my bakery you’ll stand next to the rosemary bush that is kindly giving up its foliage for this loaf. Rather than food miles I think this particular ingredient has about 2 food yards before it gets to the bakery.

The rosemary adds a subtle fragrance to this bread, but the dominant flavours are the parmesan and smoked garlic that assail your nose as soon as you slice into this loaf. I found it interesting that the parmesan behaved very differently in this loaf to the other cheeses I use in my bakes. Because it’s a hard cheese that I grate much more finely it disappears into the crumb and isn’t visible when you slice it. But the crumb comes out lovely, soft and tender, almost like a milk bread. And the crust! That’s another level.
