The family of Bastards keeps growing, all with the same blend of wheat, rye and spelt flour. The Seedy Bastard features caraway and fennel seeds, orange zest, plus toasted sunflower, sesame and pumpkin seeds, finished with a striking black sesame seed crust.

I have to be honest that this loaf was born out of an accident when I bought some cumin seeds from the local whole foods shop, only it turned out that I’d actually bought a pot of fennel seeds. In my defence they do look a little similar. They sat neglected on my ingredients shelf for a few months until I happened to have an amazing breakfast pastry in an East London bakery that featured fennel seeds as well as honey and feta, which started my mind whirring, thinking how I could incorporate the seeds into one of my bakes. A few test loaves later, building on the tradition of adding seeds such as fennel or coriander and citrus juices to rye loafs, and the seedy bastard was born!
