A white sourdough loaf packed with olives, halloumi (also known as hellim) and mint. This loaf has its origins in a traditional Turkish Cypriot recipe, the type of bread baked in the local bakery in every village on the island, hence the name Village Bread.

When testing this loaf the I found the key was in sourcing the correct olives, standard pitted black olives just didn’t have either the texture of depth of flavour that I was looking for. After a lot of trials I settled on Turkish Marmarabirlik dry cured black olives. Now the flavour was there, the texture was there, but… their only draw back is that they are small, wrinkled and have stones in.

So, if you like the idea of your unfortunate baker pitting several kilos of olives by hand, then this is the loaf for you!

Ingredients: organic white wheat flour, organic stoneground white wheat flour, water, dried black olives, halloumi, olive oil, sea salt, mint
