I have a few fruit bushes in my garden, and every year I have a stand off with the pigeons to see who gets the most. This year I’ve thrown in the towel on the blackcurrants, but have managed to wrestle a small crop of gooseberries away from them. And of course I’m going to try them in some sourdough!
So here it is, the classic Pumpernickel’s Cousin, enlivened by sharp flecks of gooseberry scattered throughout the crumb. The gooseberry tartness being a great foil for the slight sweetness of the molasses enriched dough.

Allergens: gluten, sesame. Note – rapeseed oil and palm oil are used in the release agent on the baking tin.
