A twist on the classic bun made with an enriched brioche sourdough, home made lemon curd and a drizzle of lemon icing, in fact this bun is packed with so much lemony vitamin C it can almost be classed as a health food.
For me the best part of developing this bun was learning how to make traditional lemon curd, something I’ve always thought of as a bit of a dark art (a bit like sourdough). Actually, although it takes time and attention to detail, it’s really quite a serene meditative process and was well worth the effort to master
Ingredients: organic white wheat flour, organic milk, organic butter, eggs, caster sugar, icing sugar, organic stoneground white wheat flour, lemon juice, lemon zest, sea salt
