My take on the classic cinnamon bun made with an enriched brioche sourdough.

This one’s just called the bun because I’m told that it’s so good it doesn’t need a fancy name.

I have a friend who knows her buns, but is also a bit of an Instagram expert. In fact I don’t think she’s ever eaten a cinnamon bun without taking a picture of it first. Until she had one of these that is. She wolfed it down without a second thought and had to resort to taking a photo of the bag instead. High praise indeed.

Bun love: Cinnamon buns are best eaten on the day of purchase, but if an unexpected distraction, disaster or other life event prevents me eating mine on schedule there are a couple of tricks that will bring them back to their best (or maybe even better than their best, nothing beats a warm bun!). 1. If the delay is just a day or two pop them in an oven for five minutes at 140ºC and eat while still warm. 2. If the delay will be longer stick them in the freezer in a plastic bag or airtight container and on the day of consumption pop them (still frozen) in the oven for 15 minutes at 140ºC, and again eat warm. Excellent, crisis averted.
